I like tuna salad, but I have to be in the mood for it. Unfortunately, I wasn’t in the mood when it was time to reintroduce tuna. It also didn’t help that the eggless mayo didn’t turn out right because I don’t have an immersion blender. It was good, but I’ll probably wait until I can eat actual mayo to make it again.
• Canned Tuna, drained – Make sure it’s soy free
• 1 Tbsp. onion, diced
• 1 Tbsp. celery, diced
• 1 Tbsp. carrot, shredded
• 2 Tbsp. Eggless Mayo
• 1/2 tsp. lemon juice
• 1/2 tsp. mustard
• Salt and pepper to taste
• 1 Veggie of some sort (green pepper or cucumber are good options) hollowed out
1) Combine all but the last ingredient in a medium bowl. Mix well to combine.
2) Spoon the tuna salad into the veggie boat of choice.
