Pasta Salad with Italian Dressing- Total Elimination Diet – Reintroduction Phase

This is pretty good.  Not gonna lie.  I’m a huge fan of pasta salads.  This could use some cheese (feta anyone?), but we’ll get there some day.

– Pasta Salad –

INGREDIENTS:
• 1/2 cup pepperoni, sliced
• 1/2 cup salami, sliced
• 1 cup chicken, cooked and cubed
• 1 cup cauliflower florets
• 1 cup cucumber, cubed
• 1 cup onion, diced
• 1 red pepper, diced
• 1 green pepper, diced
• 1 lb. brown rice pasta, cooked according to package direction
• 1-1.5 cups Italian Dressing

INSTRUCTIONS:
1) Combine all ingredients in a large bowl.  Drizzle Italian Dressing on top, and mix to fully combine.
2) Chill for 1 hour before serving.

– Italian Dressing –

INGREDIENTS:
• 1/2 tsp. Basil, dried
• 1 tsp. Garlic powder
• 1 tsp. Onion powder
• 1.5 tsp. Oregano, dried
• 1.5 tsp. Parsley, dried
• 1/4 tsp. Thyme, dried
• 1/2 tsp. Black pepper, ground
• 2 tsp. Salt
• 1 tsp. Honey
• 1 c. Olive oil
• 1/3 c. Red wine vinegar
• 1/4 c. White wine vinegar
• 3 Tbsp. Water

INSTRUCTIONS:
1) Combine all ingredients in jar (I used a mason jar), cover tightly and shake well to combine.
2) Note: This dressing will keep in the fridge for about 2 weeks, but the oil and vinegar will separate. Just pull it out and let it sit for a few minutes to come to room temperature and then shake it really well to mix it up again.
