Another reintroduction phase treat for you! I thought these were delicious, but my husband told me that was only because I’ve had bland foods for 8 weeks. I still think they’re pretty good. They have a little aftertaste because of the sunflower butter, but it’s not too bad.
• 1/4 c. honey
• 1/2 c. sunflower butter
• 1.5 c. crunchy cereal
• 2 Tbsp. flax seed meal
• 1/4 c. dried blueberries
1) Melt honey and sunflower butter in a pot on the stovetop over medium-low heat (be careful, the sunbutter doesn’t melt well and burns easily. Just make it liquidy enough to stir the rest of the ingredients in).
2) Remove from heat and stir in the cereal (start with 1 cup and add more until desired consistency is reached) and flax. Once you’re satisfied with the consistency of your mixture, stir in the blueberries.
3) Line a 9×9 pan with aluminum foil. Grease foil lightly with olive oil. Add above mixture to pan and press down until packed.
4) Place in refrigerator to harden. I keep mine in the fridge, but I suppose you don’t have to if you want them a bit softer.
